That’s my silicon spatula on the left.

Ingredients:

1 cup home made granola without oil (see Post 127 July 2015

1 cup mixture oats, and rye flakes to your liking.

1 cup mixture of ground flax seed and ground chia seeds. The chia seeds may be whole. These replace eggs. dried fruit/nuts as your diabetic diet permits.

1 cup almond milk which may be on the thick side and  as such you would not use.

2 Tablespoons almond butter

1/4 cup carob powder 1/2 cup teff flour.IMG_20150828_104534

1/8 cup pignoli nuts

Start by dissolving ground seed meal into the almond milk. Let this stand to thicken. You can be doing something else meanwhile. Add the granola, and mix in the other ingredients except pignoli. Pre=heat oven to 250 C.

Line a baking sheet and drop tablespoons of the mixture. Top with the pignoli. The outcome of the cookie will depend on how chunky is the beginning mixture. CAUTION: Don’t make a mixture that is overly dry.

Bake until the sides of the cookies are dry and you can flip them. They will be slightly brown on the bottom. Bake another 10 minutes. When you remove them, they will be moist. As they cool they will dry out more.

Keep in the fridge in a Zip lock bag and they will stay for several days. Can also be frozen.
