MOFO Day 6 Re-create a restaurant meal. I do not prefer restaurant faire to my own. I like going to the market and buying the best vegetables. My husband helps prep them and he stacks the dishwasher  and when done puts the dishes away. I do the fun part.

Better yet visit the Lunchbox in Tel Aviv and bring your own Macro/vegan meal. Interesting concept.

Because I am Vegan/Kosher eating in a restaurant that serves both meat and dairy  dishes is out of the question.

(JNi.media) Bringing your own sandwich to a restaurant would appear as the height of chutzpah, but not any more—at least not at Lunchbox, a new dining initiative at 19 Lilienblum Street, near Rothschild Blvd. in Tel Aviv, that encourages patrons to bring their own food from home to the restaurant and order only the extras they want.

According to Chen Emor, a Lunchbox co-owner, the initiative is part of the conception of “custom made meal,” where every diner picks his or her meal out of the elements on hand. Diners in restaurants are often seduced into ordering more portions than they actually need to satiate their hunger, and they end up overeating, spending more money than they should have, and wasting food. “Our main audience is comprised of working people who come to eat on a daily basis,” Emor says, “and we want to help them conduct themselves properly both nutritionally and economically.”

Diners who bring their food in from outside can complete the meal with protein, carbs, fresh vegetable salad or dessert as they see fit. Each diner constructs a meal that fits their exact requirements, and don’t cause them to “explode” from too much food. They don’t walk out heavy and sleepy, and can return to work or continue to their next meeting.

Lunchbox prepares its dishes in collaboration with a nutritionist, to create the right balance between vegetables, measured carbohydrates, and quality protein, without preservatives and virtually free of Frying. The meals are served ​to go, packaged with a label of their nutritional values, or to patrons sitting down at the tables.

I wish a “Lunchbox Jerusalem” will open. However-there is no Kashut label displayed. This bring your own or eat ours, reminds me of the Automats that started in downtown Philadelphia, and expanded to 40 locations including one in Brooklyn, New York. I’m 71 –How I miss them – how I remember them.

My Horn and Hardart story was told at a Weight Watcher meeting. It was not my story but a friend’s.

In the 1960’s  a woman on Weight Watchers ate her frugal diet lunch at a table with a man who had a cup of coffee and 2 powdered sugar doughnuts. She looked at them longingly. The man got up and left, leaving one uneaten doughnut on the table. She waited and, not believing her luck, broke her diet by eating the sugary donut he left behind. Satisfied and sitting back in her chair, she sees the man return with a second cup of coffee; the powdered sugar all over the front of her dress.

Rather than criticize the “veggie” cuisine scene, I am offering a recipe from the Israel Cancer Society and one from a mom.

Vegan seed spread Without Gelatin

Here is the progression of steps: flour, to clumping, to whirring smoothly, to blender cycle for creaminess.

To Paraphrase: Try this healthy Spread which doesn’t have a lot of calories.

מרכיבים למנה

טוחנים את הזרעים והמלח יחד.

מעבירים את התערובת לקערית

מעבירים את התערובת לקערית

ובוחשים פנימה את שמן הזית

ומיץ הלימון. מורחים על לחם,

ובתיאבון. כדאי להכין כמות

כפולה, כי אחרי שתטעמו,

בטוח תרצו עוד פרוסה.

אפשר להכין מנות כפולות): Ingredients:for one portion:  a teaspoon each of flax, sunflower, pumpkin, sesame, coriander and chia seeds.   There is also a seed called K’Zach, which has an English name but I have yet to translate it!   2-3 tablespoons of virgin olive oil or clear sesame oil. Pinch of salt. 1 tablespoons fresh lemon juice.

1 כפית זרעי כוסברה (לא חובה)

קורט מלח, עדיף מלח ים גס

2-3 כפיות שמן זית כתית מעולה, שמן קנולה בכבישה קרה,

טיפ

1 כפית (או יותר) מיץ לימון סחוט טרי (לא חובה)

1 כפית (או יותר) מיץ לימון סחוט טרי (לא חובה)

נסו להרכיב תערובת זרעים ממה שיש לכם

במטבח. אפשר גם להוסיף אגוזים: הכי יעיל

Steps: Ground the seeds. Place into a small bowl.  Mix. They suggest storing small amounts in the fridge and then add the oil when using the spread. Alternatively, use as a salad topping.

I am my own and my husband’s “Personnel Chef”. Many times I look at a pastry and say to myself: Why doesn’t the  chef  not substitute  2 tb brown rice syrup for the sugar and same for the honey. Is Brown Rice Syrup so costly? I guess so.

Apple Pie on a Stick

Ingredients

2 Granny Smith apples, peeled and diced
2 Tbsp sugar
2 Tbsp honey
¼ tsp cinnamon
¼ tsp salt
1 package (2 crusts) refrigerated pie crusts, set out at room-use a nut crust if you are “glutin free”.
1 egg, beaten with 1 Tbsp water
raw or “sanding” sugar, for sprinkling or omit

Special equipment:

2-3” cookie cutter (or drinking glass)
lollipop sticks

Directions

In a medium pan combine the apples, sugar, honey/ substitute, cinnamon and salt.
Bring to a simmer and cook over low heat for about 10 minutes, or until the apples have softened and the juices have thickened. Remove from heat and let cool.

Pre-heat oven to 400; line two baking sheets with parchment paper.
Unroll one pie crust on a work surface. Use your cutter to make as
many circles as you can; place on your prepared baking sheets. Put a lollipop stick in the center of each circle, pressing down lightly to secure. Place a teaspoon of cooled filling on each circle. Use a
pastry brush to brush a bit of the beaten egg around the edge of each circle.

Unroll the second pie crust and cut out an equal number of circles to the first crust – place atop the filled crusts and press lightly to
seal. Crimp the edges with a fork, and make a few small incisions in the center to allow steam to escape. Brush tops with the egg and sprinkle with the raw sugar (pops may be frozen at this point – reheat
directly from the freezer, adjusting baking time by a few extra minutes).

Bake pops for 20 minutes; transfer trays to wire racks to cool completely. Serve warm or at room temperature (pops may be kept tightly sealed, at room temperature, for 3-5 days).

Ground flax seeds are a substitute for eggs – 1 Tsp. flax in 3 Tsp.water = 1 egg. Mix the flax with the water and let it stand for a while until the flax is absorbed
