Apple Cranberry Muffins Without Flour
-This is a great cleansing recipe to use after eating a lot of rich foods.
Baking brings out the sweetness in these granny smith apples that were around a week in my fridge.Makes about 16, 40 gram muffins. Additional weight is fruit.
2 cups cut up chunks granny smith apples already cooked (preferably with cinnamon, nutmeg, 1/3 cup dried cranberries that have been soaked in vanilla bourbon or vodka). Any liquid should be poured off for the muffin liquid batter.
I cup sugarless granola/ with nuts and seeds and limited dried fruit
1 cup combination of teff, rice flour and buckwheat flour.
1/2 cup ground flax meal
1/2 cup orange juice
1/2 cup concentrated soy milk
1 teas baking powder
1/2 cup cranberries + 1/3 cup juice
- Beat egg and add flax meal
- Add remaining liquid ingredients + cranberries. You can crush some and remove the seeds.
- Combine dry ingredients and add to wet and just mix until combined
- Weigh out 40 grams of mixture into oiled muffin tins
- Top with 1 tab of chopped apple and 5 or 6 pumpkin seeds
- Bake in 250 Cent / 450 F oven about 15 minutes
- Remove and turn over and bake another ten minutes
This muffin may be considered Not mezonot and can be eaten in the house by your male family members and not in the sukah. Checking now with a halakhic authority.
